Chase Hill Farm: The Organic Farmstead Cheese from Chase Hill Farm is handcrafted in small batches from fresh top quality raw milk. We use exclusively the organic-certified milk from our own herd of grassfed cows. Our Original Farmstead Cheese is mild like a Colby or Havarti cheese, but with a unique flavor that retains the “character” of our raw milk. Our cheese has a sweet, creamy flavor and a buttery yellow color that comes from our green grass. We also make a Farmstead Cheese with Garlic, some with Chives, Cheddar, and recently started making 1/2 lb. Organic Camembert rounds.
Chase Hill Farm is an organic-certified family farm in the Pioneer Valley of western Massachusetts. Mark and Jeannette Fellows manage the farm as a grass-based seasonal dairy. Our mission is to produce quality local food from grassfed cows using sustainable low input practices. These practices include rotational grazing, seasonal calving, and using draft horsepower.
Our herd of 30 Jersey, Normandy and Holstein cows milk seasonally from March to December. We feed organic grain for about 8 weeks from calving until grass is ready here in northern Massachusetts, but the rest of the year cows are 100% grassfed.
Our Organic Farmstead Cheeses are available in local stores and farmstands in western Massachusetts, and in some of the Boston-area Bread & Circus stores. We also ship our cheeses. Wheels run around 8 lbs. each. Cost: $50/wheel plus $10/UPS shipping.
